The excela bean is grown by the Café Amadeo Development Cooperative located in Amadeo in the Cavite province of the Philippines. Amadeo is designated as the “Coffee Capital of the Philippines” and focuses on techniques to bring out the best in each coffee bean. The farmers sort the beans by hand and then sun-dry the coffee beans with the parchment still on the bean. This process is known as the “natural process”. Natural processing imparts unique flavors and aromas to the coffee and is ecologically friendly as it uses less water to process the coffee beans.
